Fresh peas are plentiful in summer. They are especially delicious raw! Try this green pea hummus dish for a fun dish for a family meal or for guests.
Ingredients
2 cups green peas
2 fresh garlic cloves (try starting with 2 medium sized cloves, but add more if you’re a garlic lover!)
½ cup cilantro (or, for cilantro-haters, try mint or even basil)
1 tbsp chopped fresh parsley
¼ cup tahini
Splash of fresh lemon juice to taste
¼ tsp ground black pepper
¼ tsp cayenne
Dash of ground cumin
2 tbsp olive oil (more to garnish)
Toasted sesame seeds for garnish
Dash of paprika for garnish
Directions
- Wrap garlic cloves in foil and roast in 400 degree oven for about 15 mins. (Roasted garlic is useful for many recipes. Try to do this when you have the oven on for something else. 350 degree will work fine as well.)
- Cook peas by plunging them in boiling water for for 3-4 minutes, then drain them and add them to a bowl of ice water to stop cooking process
- Add all ingredients except olive oil, seeds, and paprika to a food process and blend until smooth. Then slowly add olive oil. Add smooth mixture to serving bowl. Top with a generous drizzle of olive oil, more chopped fresh herbs, the toasted sesame seeds, and a dash of paprika.
- Serve your green pea hummus with crackers and crudites!
